Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup water, plus more as needed
- 2 medium potatoes, boiled and mashed
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1/4 teaspoon salt
- 1 tablespoon chopped cilantro
- Oil or ghee, for cooking
Instructions:
- In a large bowl, combine the flour and salt. Add the water and knead until the dough comes together into a smooth ball. Cover the dough with a damp cloth and let it rest for 30 minutes.
- Meanwhile, make the filling. In a large bowl, combine the mashed potatoes, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Stir until well combined. Stir in the cilantro.
- Divide the dough into 12 equal pieces. Roll each piece of dough into a thin circle. Place a spoonful of the filling in the center of each circle. Fold the dough over the filling and seal the edges.
- Heat a tawa or griddle over medium heat. Brush the paratha with oil or ghee. Cook the paratha for 2-3 minutes per side, or until golden brown and cooked through. Repeat with the remaining parathas.
- Serve hot with your favorite curry or chutney.
Tips:
- For a smoother dough, knead it for an additional 5-10 minutes.
- If the dough is too sticky, add a little more flour. If the dough is too dry, add a little more water.
- To prevent the parathas from sticking to the tawa, brush them with oil or ghee before cooking.
- If the parathas are browning too quickly, reduce the heat.
- Serve the parathas hot with your favorite curry or chutney.
