Paneer Paratha: A Delicious and Filling North Indian paratha

Paneer paratha is a popular North Indian stuffed flatbread made with a whole wheat flour dough and filled with savory, spiced, grated paneer (Indian cottage cheese) stuffing. It is a delicious and filling breakfast or snack, and can also be served as a main course.

Here is a recipe for paneer paratha:

Ingredients:

  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 1/4 cup oil or ghee
  • 1 cup grated paneer
  • 1 green chili, finely chopped
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon cumin powder
  • Salt to taste
  • Oil or ghee for cooking

Instructions:

  1. In a large bowl, combine the whole wheat flour and salt.
  2. Add the oil or ghee and rub it into the flour until it resembles breadcrumbs.
  3. Add enough water to form a soft dough.
  4. Knead the dough for 5-7 minutes, or until it is smooth and elastic.
  5. Cover the dough with a damp cloth and let it rest for 30 minutes.
  6. While the dough is resting, prepare the stuffing.
  7. In a bowl, combine the paneer, green chili, red chili powder, garam masala, turmeric powder, coriander powder, cumin powder, and salt.
  8. Mix well until all the ingredients are combined.
  9. After the dough has rested, divide it into 8 equal pieces.
  10. Roll out each piece of dough into a thin circle.
  11. Place a tablespoon of the stuffing in the center of each circle.
  12. Fold the dough over the stuffing to form a semicircle.
  13. Seal the edges of the dough by pressing them together with your fingers.
  14. Roll out the paratha again into a thin circle.
  15. Heat a griddle or tawa over medium heat.
  16. Cook the paratha for 2-3 minutes per side, or until golden brown and cooked through.
  17. Repeat steps 15-16 with the remaining parathas.
  18. Serve hot with your favorite chutney or curry.

Tips:

  • If the dough is too dry, add a little more water.
  • If the dough is too sticky, add a little more flour.
  • If the paratha is tearing while you are rolling it out, wet your hands with water.
  • To prevent the paratha from sticking to the griddle, brush it with a little oil or ghee before cooking.
