Kolkata Delight: Aromatic Fusion of Flavors in Kolkata Biryani

Kolkata biryani is a delightful and flavorful dish that combines aromatic rice with succulent meat and a blend of spices. Here’s a recipe to help you cook Kolkata biryani, followed by a description of its taste and flavors:

Ingredients:

  • 500 grams of basmati rice
  • 1 kg of meat (chicken, mutton, or beef), cut into pieces
  • 4 medium-sized onions, thinly sliced
  • 2 tablespoons of ginger-garlic paste
  • 1 cup of plain yogurt
  • 1 tablespoon of biryani masala
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of red chili powder
  • 1 teaspoon of garam masala powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • A handful of mint leaves, chopped
  • A handful of coriander leaves, chopped
  • 4-5 green chilies, slit lengthwise
  • Ghee or vegetable oil
  • Saffron strands (soaked in milk) or yellow food color (optional)
  • Salt to taste

For the rice:

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. In a large pot, bring water to a boil, add salt, and cook the rice until it is 70-80% cooked. Drain the rice and set aside.

For the meat:

  1. Heat ghee or oil in a deep pan and add the sliced onions. Sauté until golden brown and crispy. Remove half of the onions and set them aside for garnishing.
  2. Add ginger-garlic paste to the remaining onions in the pan and sauté until the raw smell disappears.
  3. Add the meat pieces and cook until they are lightly browned.
  4. Reduce the heat, add yogurt, biryani masala, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the meat with the spices.
  5. Cook the meat on low heat until it is tender and the spices are well combined. If needed, you can add a little water during the cooking process.
  6. Once the meat is cooked, add the mint leaves, coriander leaves, and green chilies. Mix well and turn off the heat.

Layering and cooking the biryani:

  1. Preheat the oven to 180°C (350°F).
  2. Take a deep oven-safe dish and spread a layer of partially cooked rice at the bottom.
  3. Top the rice layer with a portion of the cooked meat along with some gravy.
  4. Repeat the process, alternating layers of rice and meat until all the rice and meat are used. Ensure that the topmost layer is rice.
  5. Sprinkle the saffron strands soaked in milk or yellow food color on top of the rice for a vibrant look.
  6. Cover the dish tightly with aluminum foil or a tight-fitting lid.
  7. Place the dish in the preheated oven and bake for 25-30 minutes.
  8. Remove from the oven and let it rest for a few minutes.
  9. Before serving, garnish with the reserved fried onions.
