Ingredients:
- 1 cup poha (beaten rice flakes)
- 1/2 cup chopped onion
- 1/2 cup chopped potatoes
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1/4 teaspoon red chili powder
- 1 tablespoon lemon juice
- 1 tablespoon chopped coriander leaves
- 1 tablespoon oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 pinch hing (asafoetida)
- 1 green chili, chopped (optional)
- 1 sprig curry leaves
Instructions:
- Rinse the poha in a colander until the water runs clear.
- Drain the poha and set aside.
- Heat the oil in a pan over medium heat.
- Add the mustard seeds and cumin seeds and let them splutter.
- Add the hing, green chili, and curry leaves and saute for a minute.
- Add the onions and saute until they are soft and translucent.
- Add the potatoes and cook until they are soft.
- Add the turmeric powder, salt, and red chili powder and mix well.
- Add the poha and mix well.
- Cook for 2-3 minutes, or until the poha is heated through.
- Add the lemon juice and coriander leaves and mix well.
- Serve hot.
Tips:
- You can add other vegetables to the poha, such as peas, carrots, or corn.
- You can also add peanuts or cashews to the poha for extra flavor.
- If you want a spicier poha, you can add more red chili powder.
- Poha can be eaten for breakfast, lunch, or dinner.
