Hearty and Flavorful Rajasthani Nagori Dal

Nagori dal is a traditional Rajasthani dish made with lentils, spices, and vegetables. It is a hearty and flavorful dish that is perfect for a cold winter day.

To make Nagori dal, you will need the following ingredients:

  • 1 cup chana dal (split chickpeas)
  • 1 cup masoor dal (split red lentils)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Ghee or oil for cooking

Instructions:

  1. Rinse the dals well and drain.
  2. Heat ghee or oil in a large pot over medium heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the tomatoes and green chilies and cook until softened, about 5 minutes more.
  5. Add the turmeric powder, coriander powder, cumin powder, garam masala, and red chili powder. Cook for 1 minute.
  6. Add the dals and salt to the pot. Stir to combine.
  7. Pour in enough water to cover the dals by 2 inches.
  8. Bring the dal to a boil, then reduce heat to low and simmer for 30 minutes, or until the dals are soft.
  9. Serve hot with rice or roti.

Here are some tips for making Nagori dal:

  • If you don’t have chana dal, you can use split peas or lentils instead.
  • You can add other vegetables to the dal, such as carrots, potatoes, or peas.
  • For a spicier dal, add more red chili powder.
  • For a richer dal, add a dollop of yogurt or ghee.
