crispy and fluppy malpua recipe
An easy and quick recipe for malpua, a delicious Indian sweet treat:
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup semolina (sooji/rava)
- 1/2 cup milk
- 1/2 cup water
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- Oil or ghee (clarified butter) for frying
- Chopped nuts (optional) for garnishing
Instructions:
- In a mixing bowl, combine the all-purpose flour and semolina. Add milk and water gradually while whisking to make a smooth batter. Make sure there are no lumps.
- Let the batter rest for about 15-20 minutes. Meanwhile, prepare the sugar syrup by dissolving sugar in a saucepan with equal parts water. Bring it to a boil and simmer for a few minutes until the syrup slightly thickens. Add cardamom powder to the syrup and set it aside.
- Heat oil or ghee in a shallow frying pan or skillet on medium heat.
- Once the batter has rested, give it a gentle stir. Take a ladleful of batter and pour it into the hot oil or ghee, forming a small round shape. You can make multiple malpuas at a time depending on the size of your pan.
- Cook the malpuas until they turn golden brown and crisp on both sides. Flip them using a spatula to ensure even cooking. Once cooked, remove them from the oil and drain excess oil by placing them on a paper towel.
- Dip the fried malpuas into the warm sugar syrup, ensuring they are coated well on both sides. Let them soak for a minute or two so they absorb the syrup.
- Garnish the malpuas with chopped nuts if desired, such as almonds or pistachios.
- Serve the malpuas warm or at room temperature. They can be enjoyed as is or accompanied by rabri (sweetened condensed milk) or a scoop of ice cream.
